Nikah - Who to ask for marriage?

So this woman is a convert to Islam from Christianity and she would like to get married, but she is a young adult under her parents' financial support. She has come in contact with a Muslim man who is interested in marrying her, but the following problem arised:

Her Christian father cannot be her wali in this case, but the man who wants to marry her is having trouble deciding who to ask for her hand in marriage so that they can have the chance to talk about marriage affairs. Can the man ask an older Muslim male acquaintance of the woman (who could potentially be her wali) for her hand, since her Christian father does not approve of her marrying a Muslim man at all? If not, who can the man turn to?

And regarding the wali, since he is responsible for a woman's marriage, and since her father is Christian, could an older Muslim (respected among local community and wise, who has guided this woman to Islam and has supported her in religious matters, and knows the woman well enough) be her wali and be asked for her hand in marriage and assist her throughout the meeting, engagement and wedding as a father would do for her if she had a Muslim father?

In short can a person who is 'like her father' in terms of care and concern for her, replace the father's role during this procedure?

If this would not be possible then what other alternatives does the man have so that he can ask for her hand in marriage, taking into account that the rest of the woman's family is Christian and will not accept the marriage?
Would it be possible for him to ask her directly for engagement and marriage, and have a wali only for nikah?
