Hi
I hope this question wont be taken offensively, but i have been wanting to convert to Islam for a long time and am nervous about the fact that i am very obviously white (seriously even my eyelashes are almost white lol) and i have never seen 'white' muslim girl. I am concerned that i would stand out and/or not be accepted and/or not be considered suitable 'marriage material' by muslim men.
Has anyone else encountered this issue and how have they overcome it?

I think many muslim are white. Turkey are over 70% are muslim, they are white. So don't  be wory, yes seriuosly many muslim men want to have a white wife Smile.

Firstly, the only way to know if you'd stand out would be to research the   Muslim demographics in the area white vs foreign/revert vs born Muslim.  Perhaps there are reverts in your area who are "white" but just haven't gotten around to wearing hijab yet.
 
To address your concern about being accepted; honestly, again, that would depend on the cultural climate at your local masjid (mosque). You may not be warmly welcomed by the women at first. The determining factor mainly would be how well educated/fluent in English they are. The weaker the grasp of English, the briefer their interaction with you.

Fortunately I was able to form a close bond with a couple sisters. One is a fellow revert the other is born Muslim- born and raised here in the states. I met them when I contacted the mosque to learn how to perform shahada. 
Other than these two I don't feel very welcome in my Muslim community. Rather than feel miffed about it I channel my energies on strengthening my knowledge about Islam.
 
Lastly, for a pure hearted Muslim male whether you are of marriage material depends on the quality of your faith, not the color of your skin. Some of the Muslims with the strongest faith are reverts.
